Healthy Protein Pancakes!!

Oh hello all. Long time no see! We’ve been lacks on the pancake front as of late since business amped up and the race training slowed down. But we both have a rainy morning off and wanted to celebrate.

During Playoff season, we (and many others I’ve been chatting with) have felt the wrath of beer-and-chips-overload. It feels wrong to watch a game without some kind of cocktail in hand, and now with the season being officially over, it’s time to get back to moderation. These pancakes are just the beginning.

We found the recipe here. They are made with zero oil, flour, or sugar (we did add a tiny bit of stevia for fun), and they have a whopping 32 grams of protein! Holy shitballs. supposedly they make 8 pancakes, but I guess the author made them HUGE because we came out with about 17! I’m a volume eater, what can I say, so I loved this surprise. Topped with coconut, raspberry sauce and a dribble of agave. So good, and no bad.

Anonymous asked: Would you please share your basic whole wheat pancake recipe? Thank you very much!

1 1/2 cups whole wheat all-purpose flour

1 tbsp sugar

3 tsp baking powder

1 tsp baking soda

1 tsp salt

1 1/2 cups milk 

1 egg

3 tbsp melted butter

Mix dry ingredients in a bowl.

In a separate bowl, whisk together wet ingredients.

Add dry ingredients to wet ingredient bowl and whisk until lump free.

Over medium heat, pour batter onto a greased pan/skillet. When edges start to set and bubbles start to show on top, flip and cook for an extra minute or two.

serve with your favourite topping

**If you want to try using different types of flours (like buckwheat or spelt) start by substituting a half cup of wheat flour and adjusting the milk to get the proper batter consistency.

Gingerbread Pancakes with Lemon Curd Yogurt sauce!

Um. Yum.

I thought of this idea while perusing some recipes online. My ma and I used to go to this little restaurant in my hometown Moose Jaw, and she would always get the gingerbread with Lemon sauce on top. So good.

We found the recipe for these pancakes here. They were a little sweeter because of the molasses (dessert pancakes again). Next time I think I’ll use less sugar. But still. So. Good. Dark and rich.

The huz made the lemon curd the old fashioned way night before. He made LOTS. He used this recipe for easy lemon curd. We used less butter and subbed some of the sugar with Stevia. You couldn’t even tell! Then we swirled it in with yogurt to soften the flavour a bit. I don’t think we even used 2 TBL of what he made. Lemon curd forever!

Popeye Pancakes with Irish Cream ‘Soft Serve’!

Since we were both working on St. Patty’s day and we’ll both be working tomorrow morning, we decided to make today the day to celebrate it all.

We used our regular pancake mix of whole wheat and spelt flour, but we added 2 extra things: spinach and protein powder (aka the ‘Popeye’ bit). These made the cakes a beautiful irridescent green color and added a little pep to our step. Spinach is amazing that way. It just absorbs the flavour of whatever you mix it with. I regularly put them in my smoothies.

Speaking of pep, the ‘soft serve’ was easy: Frozen sliced bananas and 2 ounces of Bailey’s. Um, Yum!! This will be on repeat for sure.

These were the perfect blend of sweet and hearty. 

Now I’m headed out to run them off. Only 5 weeks till the half-marathon! Then I may have to rethink my ‘carb-loading’ pancakes ;-)

CINNAMON ROLL PANCAKES!!

You heard me. 

This Breakfast was the cap to Jose’s birthday week. We were inspired by this recipe that we found, and also by Jose’s delish mid birthday week Cinn-bun care of Wick’s cafe.

We tried as much as possible to healthify them, but be warned- these are ‘desert’ pancakes fosho.

We used spelt flour blended with a bit of whole wheat for the cakes. We put butter in the batter instead of canola oil (cause that sounded gross to us). The swirl is made with straight up butter and organic cane sugar (can’t mess with that combo). The ‘icing’ is where we got creative. Instead of butter we used coconut butter, and we subbed the sugar and cream cheese for stevia and light cream cheese. We added a bit of rock salt too to give it that yummy depth of flavour.

These. Were. The bomb.

Cacao Chip Spelt Pancakes!
These babies were delish! We used cacao nibs instead of chocolate. These little crunchy pieces of the raw bean. Nutty and chocolaty tasting, with a little bit of bitterness. We used Vanilla Stevia instead of sugar and spelt flour mixed in with whole wheat. We topped it with thawed blueberries from the Fraser valley (so much better then grocery store berries) and of course Coconut butter!!!! I love that stuff. the jar surely wont last long.
I’m off to Victoria for the week today. I’m touring some schools with Vancouver Theatre Sports. It’s a hoot and a half watching little kids do scenes with Van’s funniest, and the Travelodge we’re staying at has a POOL!

Thanks to our buddy Monique, we tried these little fellas today. Beet Pancakes. We topped them with natural balkan style yogurt, diced baked apples and maple syrup. We used a combo of buckwheat and whole wheat flours. Sweet and earthy tasting. They require a bit more prep but they were a super fun color.

I am coaching a coleague on set tomorrow at 7:30am (barf) so we had Pancake Saturday today. Perfect snowy (blizzardy) day for breakfast and jammies.

Chocolate Peanut Butter Swirl Pancakes with Caramelized Banana

These babies were jems. We used buckwheat and whole wheat flour and added cocoa powder to the mix. in a separate bowl we mixed crunchy natural PB and and almond milk until the PB was thinned out enough that we could ‘swirl’ it on top. bananas were fried in a separate pan plantain style (make sure to use bananas that were a little less ripe to avoid them getting mushy). I topped mine with amber agave syrup too. Mmmm agave-y…

What lovely sunny days we’ve been having. Cold, but I’ll take it.

Saturday Off!

This aft the Huz and I are headed to the Playhouse to see their production of Death of a Salesman. A classic. I gotta hurry up and pump out a long run for the start of week #3 of my marathon training. ordinarily I would do it on Sunday, but I’m heading to a party tonight. Tomorrow I will probably be couch ridden. But that’s ok. It’s Sunday.
